Saltless Dinner #1: Fall 2026

Eating with kidney-related dietary considerations can make dining out surprisingly complicated. Each Saltless dinner brings a small group of guests together around a menu designed to show what’s possible when culinary creativity meets thoughtful renal nutrition.

Saltless is a not-for-profit dinner series created for people living with CKD and those who eat beside them. Inspired by firsthand experience, we created Saltless so guests can simply sit down, enjoy a restaurant-quality meal, and feel confident about what’s on their plate.

The Chef

Tara Khattar

Chef, Author & Event Designer

Tara Khattar is a chef, author and event designer with over a decade of work across Beirut, Paris, New York, Dubai and the Bahamas. She trained in gastronomy and international restaurant management at Institut Paul Bocuse in Lyon, holds a master's degree in food studies from NYU, and has cooked in Michelin-starred kitchens in Paris and the south of France. Based in New York, she brings the same attention to detail to an intimate dinner as to an exhibition for thousands of guests.

Registered Dietitian Nutritionist

A Registered Dietitian Nutritionist will help shape every Saltless menu, reviewing each course for its protein, sodium, potassium and phosphorus content. Their name and background will be announced before the first dinner.
